Ingredients
1 leek (approx. 180 g)
250 g fl oury potatoes
500 ml vegetable stock
Salt and pepper
100 ml double cream
2 tbsp fresh herbs
(parsley, basil, chives)

Potato and herb soup

Serves 4

Wash the leek, and slice into
rings. Peel the potatoes and
dice roughly. Place in a solid
container with the vegetable
stock, and cook (see below for
settings).

Purée the soup, and season
with salt and pepper. Stir in
the cream and cook (see below
for settings).

Chop the herbs and sprinkle
over the soup before serving.
