Ingredients
1 kiwi fruit
1 large orange
1 mango
150 g grapes
Juice and zest from an un-
waxed lemon
1 kg jam sugar

Tropical fruit conserve
Makes 6–7 jars, each 250 ml

Peel and roughly dice
the fruit. Grate the lemon
zest and squeeze the juice.

Mix the fruit with the lemon
zest and juice, and roughly
blend with a hand mixer.

Stir in the jam sugar and
transfer the mixture into
clean jars, fi lling up to 2/3 full.
Place the jars on the rack and
cook (see below for settings).

At the end of the cooking
time, use pot holders to
remove the jars from the oven,
and let them stand for 1–2
minutes. Finally, fi t the lids and
leave to cool.
