Ingredients
675 g strong white fl our
75 g spelt fl our
2 tsp salt
40 g fresh yeast or 2 sachets of
dried yeast
120 g softened butter
400 ml lukewarm milk

Sift the fl ours into a bowl,
then add the butter and salt.
Dissolve the yeast in lukewarm
milk and add it to the ingredi-
ents.

Mix these ingredients
together and knead to a
smooth dough. Cover with a
damp cloth and leave to prove
for approx. 1 hour.

Divide the dough into three
evenly sized pieces, and
form each into a roll. Plait them
together and place on a univer-
sal tray to bake (see below for
settings).
