* For Step 1 please place the universal tray on shelf level 1 and the rack on shelf level 2 (except with rack of lamb in which case
the rack should be placed on top of the universal tray on shelf level 1 and pre-heat the oven.  Place the food to be cooked on
the rack after it has been pre-heated at the beginning of Step 2.
** In Step 1 place the universal tray on shelf level 2 without food on it and pre-heat it. Place the food on the pre-heated uni-
versal tray at the beginning of Step 2.
