Ingredients
500 g plaice fi llet
Salt
Pepper
Lemon juice
Mustard
Horseradish sauce
4 small pickled gherkins
2 small onions
150 ml fi sh stock
100 ml white wine
1 tbsp frozen dill
20 g butter
20 g plain fl our
50 g double cream

Rolled fi llets of plaice in
a piquant sauce
Serves 4

Clean the plaice fi llets, sea-
son with salt and pepper and
drizzle with lemon juice. Spread
with the mustard and horserad-
ish sauce.

Cut the pickled gherkins into
strips. Finely chop the onions
and scatter over the fi sh. Roll up
the fi sh and secure with a cock-
tail stick. Place in a perforated
cooking container.

Put the fi sh stock, white
wine and dill in a solid cook-
ing container.

Knead the butter and fl our
into small balls, place in the
sauce.

Cook the fi sh and the sauce
at the same time. Place the
fi sh above the sauce so that the
juices from the fi sh drip into the
sauce. (See below for settings).

Stir the double cream into
the sauce and season with
salt, pepper and white wine to
taste.
