Ingredients
200 g caulifl ower fl orets
200 g carrots
2 courgettes
8 spring onions
100 g sugar snap peas
250 ml beef stock
500 g fi llet of beef
Fresh parsley

Poached fi llet of beef with a 
medley of vegetables

Cut the caulifl ower fl orets,
carrots and courgettes into
bite-sized pieces. Trim the green
parts off the spring onions and
add the sugar snap peas.

Cook the carrots and
caulifl ower in a solid
container with the beef stock
(see below for settings).

Add the rest of the
vegetables and continue to
cook (see below for settings).

Lift the vegetables out of the
stock and keep warm.

Cut the fi llet into 1 cm thick
slices and poach in the stock
(see below for settings).

Arrange the meat and
vegetables on a serving dish
and serve garnished with freshly
chopped parsley.
