2 red onions
1 red pepper
1 aubergine
400 g tomatoes, peeled and
chopped
Salt
Freshly ground pepper
Paprika
150 g Feta or goats' cheese
200 g grated Cheddar

Dice the onions, cut the
pepper into thin slices and
slice the aubergines.

Season the tomatoes with
salt, pepper and paprika to
taste, and spread over the pizza
base. Scatter the vegetables over
the top.

Dice the Feta or goats'
cheese and scatter over the
pizza. Sprinkle with grated
Cheddar, and bake (see below
for settings).
