Sea bream in a herb sauce
Preparation time: 45–55 minutes
Serves 4
Ingredients
4 prepared sea bream (approx. 400 g
each)
40 ml olive oil
Salt
Pepper
Sauce
30 g butter
20 g plain flour
4 tbsp white wine
375 ml stock
100 ml double cream
1½ tbsp chopped parsley

2 lemons

Method
Season the fish with salt and pepper,
brush with oil and place in the universal
tray.
Place the fish in the pre-heated oven.
Heat the butter in the saucepan and
add the flour. Gradually add the stock
and wine and bring to the boil. Add
cream and herbs and season with salt,
pepper and sugar.
Place the fish on pre-heated plates and
serve with half a lemon. Serve the
sauce separately.
