In   a   s mall   s aucepan,   o ver   m edium   h eat,   m elt   s ugar   u n@l   i t   c aramelizes.  
Divide   b etween   6 -­‐   4 -­‐ounce   r amekins,   s wirling   a round   t o   c oat   b olom.  
In   a   l arge   m ixing   b owl,   b eat   e ggs   u n@l   f oamy   w ith   a   w ire   w hisk.    
Beat   i n   c ondensed   m ilk,   c oconut   m ilk,   v anilla   e xtract   a nd   ¼   c up  
coconut.  
Divide   b etween   r amekins   a nd   c over   e ach   o ne   @ ghtly   w ith   a luminum  
foil.  
Add   ½   c up   w ater   t o   p ressure   c ooker   a nd   c arefully   p lace   r amekins   i nside.  
Secure   l id   a nd   s et   d ial   t o   5   m inutes.  
When   c ook   @ me   i s   c omplete,   p lace   r amekins   i n   a n   i ce   b ath   a nd   a llow   t o  
cool   c ompletely.  
Invert   e ach   r amekin   o nto   a   s erving   p late,   l et   fl an   d rop   o n   i ts   o wn.  
Garnish   w ith   w hipped   c ream,   t oasted   c oconut   a nd   s erve.
