Degraded oil remains inside the lines, valves and fittings. To completely purge the
degraded oil, do the following:
Press the n n e e x x t t ► ► button. The message =PURGE= Pump new oil push old oil

Press the P P U U M M P P button. The pump runs for a few seconds, new oil pumps in to

the vat, then the pump stops.
If necessary, press the P P U U M M P P button again to ensure the lines, valves and

fittings are purged.
Press the n n e e x x t t ► ► button. The = WIPE = OPEN DRAIN option displays.

Press the O O P P E E N N D D R R A A I I N N button. OPENING... displays. Oil drains from the vat.

=WIPE= Wipe pot with cloth or paper towel displays.

To ensure degraded oil does not mix with new oil, do the following:
Lift and secure the lid. Refer to

instructions.
Use a cloth or paper towel to wipe the remaining oil down the vat drain and

clean the vat surface.
Remove the ODS carefully to prevent splashing and spillage, and then close

and lock the lid.
Transport the ODS to an approved oil storage container and follow ODS
4 4 ) )
procedures to empty the oil.
When done, store the ODS in a safe location.

Fill the vat with new oil by doing the following:
Press the n n e e x x t t ► ► button. EXIT DISPOSE? and YES NO displays.

Press Y Y E E S S . - OFF - displays.

Clean and dry the drain pan and install a new filter. Refer to

Insert the drain pan under the unit.

Align and push the quick disconnect filter tube, on the drain pan, in to the filter
5 5 ) )
tube receptacle on the bottom of the unit.
Fill the vat to the lower limit line with fresh oil.

Power on the fryer unit and return to normal operation.
