8. CREATING MODIFIED ATMOSPHERE PACKAGING
Before proceeding to package, make sure the modified atmosphere GAS cylinder is connected and that the GAS pres-
sure is 1 bar.
Step
Choose the bag depending on the use (preservation or
cooking) best suited to the dimensions of the product:
the product should not occupy more than 2/3 of the

actual volume of the bag.
Insert products cooled to 3°C.
Open the lid and make sure the vacuum chamber and

product to be packaged are dry. Take care not to dirty
or wet the inner part near the bag opening.
Position the bag centred on the sealing bar (A), insert

the gas intake nozzle in the open flap and block the
bag under the Clips (B).
