UMMARY
There are no daily maintenance procedures required on the Viper unit other than normal cleanup of spills or overspray and
emptying the drip tray. Normal equipment maintenance intervals are listed in Table 59 It is recommended that a preventa-
tive maintenance procedure be performed every twelve (12) months. This procedure should include all of the maintenance
items described in Table 59 and the following sections.

Check BRIX
Seal Change
Clean Condenser Coil
Sanitize Unit
Check Water Filter
Change or Rotate Scraper Blades
Check for Leaks
Clean BIB Connectors & check operation of
syrup sold out switches
Check Clock Setting
Change caged o-ring on models w/ Motor-
man Valves.

CAUTION:
Only trained and certified electrical, plumbing and refrigeration technicians should service this unit. All wiring and plumb-
ing must conform to national and local codes.

ONTHLY
AINTENANCE
A general inspection of the machine for leaks and cleanliness should be done on a weekly basis. Any abnormal conditions
should be reported and corrected when noticed.

Cleaning Air Filter

The air filter should be cleaned at least once a month (more often in harsh environments). Perform the procedure in Table
60 to clean the air cleaner.
