Salmon fillet with Muscadet sauce

Preparation time: 65–75 minutes
Serves 4
Ingredients
6 salmon fillets (120–150 g each)
1½ tbsp. oil
Salt
Pepper
Sauce
100 ml Muscadet
160 g softened butter
Salt
Pepper
Sugar
2 lemons

Preparation
Season the salmon fillets, brush with oil
and place in a dish which has been
greased with oil.
Place the fish in the pre-heated oven.
Allow the Muscadet to reduce in a pan,
add the butter in small pieces and beat
well with a whisk. Season with salt,
pepper and sugar.
Place the salmon fillets on a pre-heated
plate with half a lemon. Serve the sauce
separately.
