1. Remove electrical power supplied to
the fryer.
2. Drain the shortening from the vat
(frypot).
3. Remove the control panel. See
Lower the Control , page
4. Using a 1/2" wrench, remove the nut
on the compression fitting.
5. Remove the temperature probe from
the vat (frypot).
6. Follow the appropriate instructions
below depending upon the type of
fryer, gas or electric.
