VEG FRIED RICE

PREPARATION TIME: 10 mins
COOKING TIME: 15 mins
SERVES: 4
INGREDIENTS
1½ cups Basmati rice, cleaned, washed and
soaked for 1 hour
6 cups
Water
5 tbsp
Groundnut oil
4 cloves
Garlic, sliced
3
Red chillies, seeded and finely
chopped
2
Onions, chopped
1½ cups Chopped button mushrooms
1½ cups Broccoli florets
½ cup
French beans, stalks removed and
sliced into 2
4 tbsp
Soy sauce (light)
2 tsp
Sugar
METHOD
Microwave rice and water, covered, on HIGH for 10
minutes, until slightly undercooked. Drain out excess
water. In another bowl, pour the oil. Add garlic and
chillies. Microwave for 30 seconds. Add onion.
Microwave for 5 minutes. Add mushrooms and
broccoli. Microwave for 4 minutes until the greens
are bright and starting to soften. Add beans and
1tbsp water. Microwave for 2 minutes. Stir in the
cooked rice, sugar and soy sauce. Taste for
seasoning. Microwave on HIGH for 2 minutes and
then a further 2 minutes on 600W so that the rice
and vegetables are cooked together. Serve hot.
Tip:
When cooking rice in
the MWO, don't add all the
water at one go, as it will
boil over.
