Try This: Mediterranean-Style Bread
Recipe
The recipe for this hearty, savory bread uses several of the
baking techniques described in the preceding section:
In addition to the ingredients listed for French Bread on
page 85, this recipe requires:
Chopped garlic (to taste), ½ cup sun dried tomatoes (or to
taste) and fresh chopped rosemary and basil (to taste).
Optional ingredients:
prosciutto ham.
Prepare French bread according to the recipe on page 83.

At the end of the second SHAPE (approximately 1 hour and

35 minutes into the cycle), press PAUSE.
Remove the dough from the baking pan. Roll it out on a

clean, lightly floured surface into a rectangle approxi-
mately 8-½-inch x 13-inch.
Lightly brush with good quality, extra virgin olive oil. Sprin-

kle the oiled dough with fresh chopped garlic, basil, rose-
mary and sun-dried tomatoes. Top with
feta or goat cheese. If you like, you could add 2 to 3 slices
of prosciutto.
Roll the dough tightly jellyroll fashion, into an 8-½-inch

wide roll. Tuck the ends under and place into the bread
pan. Return the bread pan to the Breadmaker, close the lid
and press START. Be sure all added ingredients are
enclosed in the dough before baking.
The final Rise will begin, immediately followed by Bake.

As the baking begins, press PAUSE again. Score the top

crust and gently mist the loaf with cold water. Close the lid
and press START to resume baking.
