Fajita Black Bean Bowl,
Yield: 1 Meal
PREPARATION
1.
Cook brown rice according to package directions. In a small bowl, combine warm
rice with avocado oil, lime zest, lime juice, salt, pepper and cilantro.
2.
Using the same bowl, mix black beans with salsa.
3.
Heat oil in a skillet over medium-high heat. Add sliced peppers, onions and garlic.
Lower heat to medium. Sauté 5 minutes or until desired tenderness. Add oregano,
salt and pepper.
4.
Pack fresh mango slices for a sweet, cool dessert.
