Avocado Lime Tuna Salad
Yield: 1 Meal
AVOCADO LIME TUNA SALAD:
1/2 medium avocado
1/2 lime, juiced
Salt and pepper to taste
1 – 6 ounce can tuna, drained
2 tablespoons chopped red onion
1 clove garlic, minced
1 tablespoon fresh chopped cilantro or parsley
6–8 BAKED TORTILLA CHIPS
BABY CARROTS
FRESH MANGO SLICES
PREPARATION
1.
Mash the avocado with a spoon or fork. Stir in lime juice,
salt and pepper. Add the tuna, onion, garlic and fresh
herbs. Mix to combine.
2.
Pack baked tortilla chips, baby carrots and fresh mango
slices to complete the meal.
