Marinated Shrimp with
Greek Salad
Yield: 1 Meal
MARINATED SHRIMP:
2/3 cup cooked shrimp (6–8 medium shrimp)
1 tablespoon extra virgin olive oil
1/2 lemon juiced, lemon
1 tablespoon chopped fresh parsley
Salt and pepper to taste
4 WHOLE GRAIN
PITA TRIANGLES
PREPARATION
1.
Mix shrimp, olive oil, lemon juice, salt, pepper and parsley. Let sit a few hours before eating.
2.
Toss salad vegetables with olive oil and lemon juice. Season with salt and pepper. Top with feta.
3.
Include fresh whole grain pita bread.
4.
Pack nectarine slices for a sweet end to lunch.
GREEK SALAD:
1/2 cup diced cucumber
1/4 cup diced tomato
1/4 cup diced red onion
1/4 cup chopped kalamata olives
1 tablespoon extra virgin olive oil
1/2 small lemon, juiced
1 tablespoon crumbled feta cheese
Salt and pepper to taste
SLICED NECTARINES
