Pan Seared Pork, Sautéed Apples
and Roasted Brussels Sprouts
Yield: 1 Meal
SEARED PORK TENDERLOIN:
6 ounce pork tenderloin
1/4 teaspoon cumin
1/2 teaspoon brown sugar
1 teaspoon canola oil
Salt and pepper to taste
GARLIC AND HERB COUSCOUS:
1 cup cooked whole grain couscous
1 tablespoon fresh lemon juice
1/8 teaspoon lemon zest
1 clove garlic, minced
2 tablespoons finely chopped parsley
Salt and pepper to taste
ROASTED BRUSSELS SPROUTS:
1-1/4 cup fresh baby Brussels sprouts, halved
2 teaspoons extra virgin olive oil
Salt and pepper to taste
SAUTÉED CINNAMON APPLES:
1 cup fresh apple slices (1/2 large apple)
1 teaspoon butter or coconut oil
1/2 teaspoon brown sugar
1/8 teaspoon ground cinnamon
Pinch of salt
