Use low, shallow bakeware with convection cooking.

This allows the heated air to circulate around the food.
When baking on more than one rack, do not stagger

cookie sheets; round cake pans should be staggered.

For small items such as cookies, check 1 - 2 minutes

before the recipe time.
For larger baked items such as cakes, check 5 -
¡
 6 minutes before the time indicated on the recipe.
Large meat or poultry items may cook up to 30 minutes
¡
less than the suggested time. Check them so they will
not be over baked.
Convection bake dehydration recommendations

Wash and towel dry. For fresh

(13 mm) thick, skin down on rack.
Peppers
Wash and towel dry. Remove
membrane of peppers, 1" (2.5 mm)
coarsely chopped pieces.
Mushrooms
Wash and towel dry. Cut thin
slices, ⅛" (3 mm) thick.
Tomatoes
Wash and towel dry. Cut thin
slices, ⅛" (3 mm) thick, drain well.
How to use true convection mode
True Convection is best when baking multiple racks of
cookies, pastries and other individually baked goods.
