Ingredients (40 oz)
40 oz
25 oz potatoes, 4 oz milk, 4 oz cream, 1 oz
beaten whole egg, 1 tsp each of salt, pepper,
nutmeg, 5-6 oz grated mozzarella cheese,
butter, thyme.
For a 20 oz recipe, use half the quantities
above.
Method
Peel potatoes and slice them to 1/8-1/4 inch
thickness. Spread the slices on a clean towel
and keep them covered with the towel while
you prepare the rest of the ingredients. Rub
the surface of a gratin dish with the butter.
Put the rest of the ingredients except grated
cheese into a large bowl and stir well. Layer the
potato slices in the dish slightly overlapping
and pour the mixture over the potatoes. Spread
the grated cheese over the top, and then put the
gratin dish on the low rack. After cooking, let
stand for 2-3 minutes. Serve sprinkled with a
few fresh thyme leaves.
