Shingle the ribs on directly on a sheet pan with a 75% overlap and
cover them with plastic film. Tuck the film under the ribs to create a
good seal. Cover the pan completely with foil and seal tightly around
the edges of the pan. Sauce before service, or serve the sauce
"Southern Style" [on the side]. These are best cooked overnight and
there should be very little bone showing [1/4"] on the finished
product.
