1. Safety advice

Non observance, omitting installation steps
or improper set up, installation, adjustment,
implementation, service or maintenance, as
well as changes on the unit can cause
death to the installer or the user and can
lead to a damaged unit.
Note that problems due to the above
mentioned errors will not be covered by the
warranty.
Read this Installation Manual completely
and carefully before setting up the unit and
starting operation.
This Combi Steamer can only be installed
by a CONVOTHERM-trained service
specialist in accordance with these
instructions.
Installation must be in accordance with
requirements of AS 5601/AG 601, local
authority, gas, electricity and other relevant
statutory regulations (only for Australia).
Inspect unit for transportation
damage!
Damaged units must not be installed or
operated.
How the combi steamer functions
This combi steamer is used for cooking,
steaming, convection and super heated
steam.
Thereby, this combi steamer covers just
about all possible food cooking methods.
The user can steam, blanch, poach, braze,
cook, roast, stew, bake, gratinate, grill, sous
vide cooking, low temperature cooking,
regenerate and defrost.
Designated applications
CONVOTHERM Combi steamers are
only allowed to be used for the above
applications!
Combi steamers are for commercial
use.
The temperatures range from +4° C to
+35° C.
To avoid accidents or damage to the
combi steamer, regular training of your
personnel is necessary. The unit must
be operated only by trained personnel.
Additionally, it is urgently
recommended that the operating
personnel be given safety
instructions.
This combi steamer can only be
installed by a trained service
specialist in accordance with these
instructions and in accordance with the
local and current standards and
regulations. The technical gas
installation of the unit can only be
performed in observance of these
instructions by a gas supply company
or an installation contractor.
Do Not
Operate in a poisonous or explosive
atmosphere.
Operate or start up in a temperature
<+4° C also after transport or outdoors.
Operate unit outdoors without
protection from rain.
Cook food in closed containers (for
example, cans and jars) that are not
designated for cooking.
Heat flammable materials such as oil,
fat, touchans or similar substances.
Heat non-food substances (other than
designated oven accessories).
