Potato gratin in a mustard sauce
Preparation time: 100–110 minutes
Serves 4
Ingredients
800 g potatoes
1 onion, finely diced
1 clove of garlic, finely diced
30 g butter
2 tbsp coarse grained mustard
250 ml vegetable stock
A pinch of saffron
125 g double cream
Salt
Pepper

100 g grated Cheddar cheese

Ovenproof dish 28 cm

Method
Peel and slice the potatoes, and parboil
in salted water for about 5 minutes.
Drain and arrange in the bottom of the
greased ovenproof dish.
Fry the onions and garlic gently in
butter. Add the mustard, stock, saffron
and cream, and bring to the boil.
Season with salt and pepper.
Pour the sauce over the potatoes, and
sprinkle over the grated cheese. Bake
in the oven uncovered.
