Savoury dishes

Ratatouille

Preparation time: 50–95 minutes
Serves 6–8
Ingredients
5 tbsp oil
2 onions, diced
1 clove of garlic, finely diced
2 red, 2 green and 2 yellow peppers
6 tomatoes
750 g courgettes
Salt
Pepper
1 tsp dried rosemary
1 tsp dried basil
Accessories
Saucepan
Ovenproof dish with lid, approx. 30 cm
Method
Halve the peppers and remove the
seeds and pith. Cut into large chunks.
Quarter the tomatoes. Slice the
courgettes into 1 cm pieces.
Sauté the onions and garlic in the oil.
Add the vegetables and continue to
sauté for a few minutes. Season
liberally with salt, pepper and herbs,
and transfer into the ovenproof dish.
Cover with a lid and place in the oven
and bake.
