GBF-70 Fryer
5. Cleaning
This section explains procedures for cleaning and maintaining the GBF-70 Fryer necessary to keep it in good
operating condition.
5.01
Removing
This section explains the procedure for removal and disposal of waste cooking oil from fryer. To maintain good
food quality, oil should be changed out every 7 to 10 days, depending on filtering practices, types of food, and
quantities regularly cooked. Oil removal must also precede a Boil-Out procedures. Note that there will be
procedural differences depending on whether the unit is
an Automated or Manual model fryer.
The GBF-70 Fryer is capable of being connected to a
customer provided Oil Management System for bulk
handling and disposal of waste oil.
DO NOT attempt to pump cold oil. Doing so can possibly clog the filter system and
damage the unit. Oil must be heated to at least 200°F (93°C) before pumping.
1. If oil to be removed is cold, heat to at least 200°F (93°C).
2. Place the Heat Switch ② in the [OFF] position (unit to be
drained on banked system) . Power Switch ① must remain
[ON]. Note below for banked system.
Automated Banked system:
◊ Double - power switches of both fryers must remain [ON].
◊ Triple - power switches of two left-hand fryers must remain [ON].
Manual Banked system: Power switch of left-hand fryer must remain [ON].
3. Ensure the Filter Pan ③, along with Filter Pan Cover, is properly positioned. Confirm
Filter Pan Hose ④ is properly and securely connected at the quick-disconnect fitting.
On banked systems, this step refers to the left-hand unit with Filter Pan.
IMPORTANT!
Automated Model Only: Be sure that the rear of the Filter Pan properly engages the Filter Pan Load Cell Lever
on the fryer frame. If the Controller senses the pan is not in place, or that it already contains a quantity of oil,
the auto-drain valve WILL NOT open. An alarm will sound and an error message prompt is displayed on the
Upper Display.
During the following phase, cooking oil is drained from the vat, which exposes the
heating elements. Though safety interlocks are in place, failure to have the Heat Switch
in the [OFF] position before draining could result in fire. ALWAYS CONFIRM THAT THE
HEAT SWITCH IS IN THE [OFF] POSITION BEFORE STARTING TO DRAIN.

Maintaining

DO NOT wash down fryer's interior or exterior with water from a spray hose.
Failure to comply with DANGER notices will result in serious injury, even death, damage
to equipment or property damage, and void the factory warranty.
