• During the Limited Warranty period, Giles will replace or recondition, at its factory, any part or parts of this unit which Giles inspectors judge defective, provided the unit has been properly installed, subjected to normal usage, and operated and maintained in accordance with specified procedures.
The information contained in this Manual has been prepared to describe the proper procedures for safely installing, operating and maintaining Giles Food Service Equipment. Hazard Alert Symbols are used throughout the Manual in conjunction with key words, such as DANGER, WARNING, or CAUTION, to alert Users to potential personal injury hazards and/or poor operating practices.

Safety GBF-70 Fryer • The appliance must remain in an upright position. • Exercise care when removing the unit from shipping pallet. • DO NOT operate the appliance, unless its components and their intended functions are fully understood (see Section 3). After fully understanding all Fryer functions and controls, closely follow the procedures and instructions in this Manual to avoid equipment damage or malfunction.

Safety GBF-70 Fryer • Components exposed on the Control Panel surface are impact-sensitive. To avoid damage and ensure proper operation, exercise care when working around or using carts/rolling tables near the appliance. • DO NOT install the unit near combustible walls and materials. Failure to maintain safe distance may result in fire.
GBF-70 Fryer Introduction THANK YOU for purchasing the Giles Model GBF-70 Electric Fryer, manufactured by Giles Enterprises, Inc., Montgomery, Alabama (USA), hereafter referred to as "GIL S". Every unit is thoroughly inspected and tested prior to shipment in efforts to ensure that it will operate flawlessly when received. With proper care and maintenance the appliance will provide years of trouble-free service.
The appliance shall be installed, operated, and maintained in accordance with the Standard for Ventilation Control, and Fire Protection of Commercial Cooking Operations, NFPA 96. These steps will help to ensure proper installation. If there are questions concerning these procedures, contact Giles Technical Support at 800.554.4537 or email services@gfse.com.
Damages to appliance or accessories caused by poor work practices or improper use of material handling equipment shall not be covered by the factory Warranty. Giles shall not be liable for personal injuries or property damage which may be incurred during installation of this equipment.
• The GBF-70 Fryer is manufactured for the various electrical specifications shown on Table 2.04.1 below. Check the Serial/Data Label inside the Cabinet or attached to the Rear Panel to determine the electrical service required for the Unit.

2.06 Optional Oil Management System Connections • GBF-70 Fryer is configured ready for connection to a customer supplied bulk Oil Management System. Both fresh oil inlet and waste oil discharge outlet are provided on the rear of the unit to allow direct connection to a system.
Finalizing Installation Every effort has been made to ensure that new GILES units are in perfect operating condition when received and each one has passed rigorous quality control testing prior to shipment. To ensure that it has been properly installed and will operate as expected when placed into service, we recommend that after installation work is completed, the following steps be performed to check the basic functionality of fryer systems and prepare it for first use.
Installation GBF-70 Fryer 2.09.1 Power Test The following test confirms that the unit is receiving power. Perform for each unit in a banked system. 1. Confirm that circuit breakers supplying power to unit are ON. If Disconnect Switch Box is installed between the main panel and fryer, be sure that it is in the ON position.

4. Fryer Operation The GBF-70 Fryer is available as a single Fryer unit or as a banked battery of (2) or (3) Fryer units, equipped with custom computer Cooking Controllers. Optionally, the unit can be configured for virtually hands-free, automated oil filtration.
GBF-70 Fryer Fryer Operation 4.01 The Computer Controller This section explains the functions, features, and programming/operational procedures for the Dual-Timer Computer Cooking Controller. This controller has been designed to be user-friendly and when working with it many instructions and prompts will be shown on the Upper Display (blue) to help guide you through each process.

During operation, certain instructions and prompts will be shown on the Upper Display to help guide User through processes. Additionally, some Controller keys and indicator lights will illuminate as a further aid.
GBF-70 Fryer Fryer Operation 4.01.3 Setting the Cooking Temperature Cooking Temperature setpoint is input manually. Menu Item cooking presets do not include temperature settings. Instruction prompts are shown on the Upper Display to help guide User through the process. Use keypad to enter cooking temperature setpoint ( F).

Fryer Operation GBF-70 Fryer 4.01.6 Cooking Cycle General Overview Temperature SETPOINT, MENU NAME, and COOKING TIME currently assigned to each side are shown on the Upper Display. When in READY state, temperature setpoint is shown on Lower Display. The READY message indicates that cooking oil is at temperature and the fryer is ready for cooking.
GBF-70 Fryer Fryer Operation 4.01.6 Cooking Cycle General Overview - continued STIR ALARM: When active, an audible alarm is sounded at a specific time during the cook cycle, signaling the operator to stir the cooking product to help promote even cooking and prevent sticking. The feature must be enabled in User Settings, Section 4.01.8 and the parameter must be set.
Fryer Operation GBF-70 Fryer 4.01.8 COOL MODE COOL MODE is an energy-saving feature that changes oil temperature setpoint to a lower valve. Places Fryer into an idle standby state during periods of inactivity. Enter COOL MODE by pressing the [COOL] key. The temperature setpoint changes to the COOL TEMP setting specified in User Settings, see Section 4.01.8, Edit User Settings.
GBF-70 Fryer Fryer Operation 4.01.9-1 TOP-OFF OIL LEVEL (Function 1) Selecting this Function moves the automated OIL RETURN valve for the particular fryer unit to the [FILL POT] position. An internal top-off pump will start and run for a programmed amount of time (30 secs). Fresh cooking oil will be pumped into the vat for top-off, from either a Saddle Tank supply (for single fryer) or a “Jug-In-Box”...
GBF-70 Fryer Fryer Operation 4.01.9-5 PUMP (Function 5) Selecting this Function causes the fryer Filter Pump to turn ON and run. To stop pump, select [CANCEL], keypad [8]. Running the Pump is required for pumping waste oil to the Oil Discharge Wand Hose or to a third-party bulk waste oil tank.
GBF-70 Fryer Fryer Operation 4.01.10 User Settings (Accessing & Editing) Accessing the User Settings menu is accommplished as follows: Press the Press the [START] key [TIME] key Input User Settings will be shown on the Upper Display. To view current settings, use numeric keypad [4] / [6] (left/right) to scroll through and display each setting.
An error occurred while saving settings to the EEPROM. Contact ER37 EEPROM Error Giles Tech Service (800.554.4537). The ADC (Analog-to-Digital Converter) chip that reads output ER38 Internal ADC Error from thermocouples is not working. MCB1 board must be replaced. Contact Giles Tech Service (800.554.4537).
Press [START] key to enter PREHEAT mode. Heating Element will not turn ON until [START] is pressed. NOTE: If an error condition cannot be resolved, please contact a factory-authorized service agent, or call 800.554.4537 for Giles Technical Support.
4.02 Cooking Procedures This section provides detail of the cooking procedures for a GBF-70 Electric Fryer. The fryer is either the Automated Model, featuring automated valves actuated by the Controller and providing automatic functions such as Oil Top-Off and Oil Filtration, or it is a Manual Model with manually operated valves and functions.

ONLY fill to this level to allow for expansion of the oil when heated to cooking temperature. Bulk Fresh Oil Supply System: The GBF-70 Fryer is capable of being directly piped to a Bulk Oil Management System which can supply fresh cooking oil to the fryer, as well as collect waste oil after use.

Cleaning & Maintaining GBF-70 Fryer 5.02 Boil-Out Procedure - Cleaning the Fry Vat - continued Closely follow the cleaner product manufacturer’s instructions and hazard warnings. Many commercially available cleaners may contain caustic chemicals and require special precautions when used, to avoid personal injury and/or damage to the fryer.

Closely monitor the catch container. Close drain valve and empty container as often as needed to avoid overflow while draining and rinsing.
The following procedure describes cleaning the Filter Pan and refreshing filter media. Typically, traditional disposable filter paper is used, however as an alternative, Giles offers an optional sustainable stainless steel filter screen, which is cleanable and reusable. This procedure should be performed after each Boil-Out Procedure and, as a minimum, once per day of operation.

Optional Filter Screen Note: When opting to use the sustainable Stainless Steel Filter Screen, purchased separately from Giles, please follow the usage and cleaning instructions provided with the item. This item is an alternative substitute for filter paper and is NOT to be use in addition to filter paper.
