To set the temperature for the GILES GEF-560 fryer:
1. Press and hold the Program Key for approximately 5 seconds until the red LED above the key is illuminated. 2. The Main Display will read "PROG," and the Scrolling Display will read "Choose Menu." 3. Select the desired Menu Key to program or edit. 4. Use the Up & Down Arrow Keys to cycle through the available menu item labels. 5. Adjust the temperature setpoint as needed.
For specific functions: - Idle Mode: Temperature setpoint changes to 275°F automatically. - Boil Out Mode: Press the Boil button for 5 seconds, and the temperature setpoint changes to 200°F for a 30-minute cycle.

GEF & GEF-VH Series Fryers Installation This section provides a summary of procedures necessary for proper installation of the Giles Model GEF or GEF-VH Series Fryer. To avoid potential for personal injury and/or equipment damage, please be sure the steps and procedures are followed.
IMPORTANT! Be aware that the GEF-VH model is somewhat top-heavy. IMPORTANT! Giles shall not be liable for damages to the unit caused by improper use of material handling equipment or poor work practices. Installation GEF & GEF-VH Series Fryers Electrical Requirements • Fryers must be properly grounded accordance with local code, or in the absence of local code, with the National Electrical Code, ANSI/NFPA 70. Improper grounding may result in electrical shock to Users. Check local electrical code to ensure that proper grounding techniques are used.
Electrical installation materials (breakers, conduit, fittings, wire, etc.) and installation labor shall be supplied by the customer. Work should be performed by a qualified electrician, or service technician. Installation must comply with local code requirements. Giles is not responsible for code compliance with regard to installation and use of this appliance.

Installation GEF & GEF-VH Series Fryers Ventless Hood Fire Suppression System The fire suppression system in Ventless Hood Fryers is an Ansul® R-102 Restaurant Fire Suppression System (UL197 Listed). The system is designed and UL-listed to provide fire protection for cooking appliances such as fryers. It is a mechanically activated system which automatically provides constant protection against accidental fire.

Ventless Hood GEF-VH Series Fryers Only 7.1.9 EAC Filter Cleaning Timer GEF-VH Fryers produced after Feb 2016 are equipped with an E.A.C. Filter Cleaning Timer. This feature was developed to help Users adhere to the proper Filter Cell cleaning routine. Timely cleaning is necessary to ensure the Hood section continues to effectively clean the air.
Never attempt to clean the Charcoal Filter; damage to the equipment could result. Typical replacement cycle is 30 to 40 days, depending on usage. Replace the Charcoal Filter with Giles Part No. 30248. Failure to use Giles OEM Replacement Parts and Filters may void the factory warranty.
Ventless Hood GEF-VH Series Fryers Only 7.1.12 Filter Alarm Chart The following table explains various Filter Alarms which may occur. When an alarm condition occurs, an audible alarm tone will sound. It will be a continuous tone or an intermittent (beeping) tone, depending on the type of the alarm.
Inspection and testing of interlock function should be performed MONTHLY as described below. Check the appropriate box in the Service Log to indicate completion of a test. If problems are detected, contact a Giles authorize kitchen equipment service company to have the problem evaluated and repaired.
Ventless Hood GEF-VH Series Fryers Only 7.2.3 Semi-Annual Fire Suppression System Inspection & Service Inspection, servicing and maintenance of the Fire Suppression System must be performed by a qualified fire protection equipment service company, having credentials acceptable to local authorities having jurisdiction (AHJ). As a minimum, field inspection of the system shall be performed every six (6) months.

HOW TO SET THE TEMPERATURE FOR GEF560
To set the temperature for the GILES GEF-560 fryer:
1. Press and hold the Program Key for approximately 5 seconds until the red LED above the key is illuminated.
2. The Main Display will read "PROG," and the Scrolling Display will read "Choose Menu."
3. Select the desired Menu Key to program or edit.
