To set the temperature for the GILES GEF-560 fryer:

1. Press and hold the Program Key for approximately 5 seconds until the red LED above the key is illuminated.
2. The Main Display will read "PROG," and the Scrolling Display will read "Choose Menu."
3. Select the desired Menu Key to program or edit.
4. Use the Up & Down Arrow Keys to cycle through the available menu item labels.
5. Adjust the temperature setpoint as needed.

For specific functions:
- Idle Mode: Temperature setpoint changes to 275°F automatically.
- Boil Out Mode: Press the Boil button for 5 seconds, and the temperature setpoint changes to 200°F for a 30-minute cycle.

Ensure you follow the manual instructions for proper operation.
