Priming

1. With a pail beneath the door spout, open the draw
handle. Make sure the prime plug is still in the up
position (soft serve side only). Pour two gal. (7.6 L) of
fresh mix into the mix hopper and allow it to flow into
the freezing cylinder. This forces out any remaining
sanitizing solution. When full strength mix is flowing
from the door spout, close the draw handle.
Note: Use only fresh mix when priming the freezing
cylinder.

2. Once a steady stream of mix starts to flow from the
prime plug opening in the bottom of the freezer door,
push down the prime plug (soft serve only).
Important! Failure to remove all sanitizing
solution may result in damage to the freezing
cylinder.

3. Lubricate the O-rings on the air tube on the end with
the small hole on the side (soft serve only).

OPERATING PROCEDURES
4. Install the air tube (the end with the hole) with the air
orifice installed into the mix inlet hole in the mix
hopper (soft serve only).

5. Press the AUTO key. The AUTO light will come on
indicating the main refrigeration system is operating.
When the machine cycles off, the product is at
serving viscosity.
Note: The MIX light will also come on, indicating the
mix refrigeration system is operating to maintain the
mix in the mix hopper.

6. Fill the hopper with mix. As the mix level comes in
contact with the mix level sensing probe on the rear
wall of the hopper, the MIX LOW light will shut off.
7. Place the mix hopper cover in position over the mix
hopper.
8. Repeat step 1 through step 7 for the other side of the
freezer.
