Introduction
THANK YOU for purchasing the Giles Model GBF Series Electric Fryer, manufactured by Giles Enterprises, Inc.,
Montgomery, Alabama (USA), hereafter referred to as "Giles". Every unit is thoroughly inspected and tested prior
to shipment in an effort to ensure that it will operate flawlessly when installed. With proper care and maintenance
the appliance should provide years of trouble‐free service.
To help protect your equipment investment, we recommend that you take a few moments to become familiar with
the recommended procedures in this Manual that pertain to installation, operation, cleaning, and maintenance of
the appliance. Adherence to these procedures will help minimize potential for costly downtime and future repair
expense. Please retain this manual for future reference.
NOTE: Due to continuing improvements and product enhancements, some illustrations shown in this Manual might not
exactly depict your actual equipment.

Construction

Constructed of 18 and 20 ga. 430‐series stainless steel. Inner cabinet structure is a welded stainless steel tubular
frame. Stainless Firebar heating elements.

Standard Features

Computer Controller: Controls cooking oil temperature and cook time. Dual cook timers, programmable cooking
presets for fifty (50) different menu items, continuously monitors fryer status
and warnings (DRAIN OPEN, LOW OIL LEVEL, MAX. ELEMENT TEMP, etc). Features BOIL OUT program, COOL
MODE function, FORCE FILTER control, LOW OIL detection, multiple language selections, and password security
option.
On‐board Oil Filtration System: Features 1/2 hp pump; designed to perform a filter cycle within approximately five
(5) minutes. Centralized system serves all units of multi‐well banked configurations. Proper use helps to increase oil
life by as much as 50%.
Multi‐Well Fryer: Available as a banked battery of 2 or 3 fryers.
Stainless Steel Micromesh Filter Screen: Reuseable, 115 micron retention, stainless steel filter screen replaces
paper as the oil filtering media to eliminate paper waste and help reduce total cost of operation.

Optional Features

Automatic Basket Lift: Two (2) Basket Lifts per unit. Automatically lowers and raises basket of product at the
beginning and end of the programmed cook cycle.
Oil Level Top‐off System: Fresh oil supplied from an on‐board saddle tank or from a customer‐provided bulk fresh oil
supply to easy maintain oil level in vat with the push of a button.
Bulk Oil System Direct Connection: Internal fryer plumbing simplifies connecting fryer to a user‐provided bulk oil
management system (fresh supply and/or waste). Unit may be equipped with either or both.
KITCHENTRAC™ Remote Monitoring: Keep track of appliance activity with WiFi connectivity ... track operations,
analyze performance, activity, utilization, menu item sales and trends, maintenance activities, event logs, etc. all
from any web connected device.
