Step 5
Open the draw arm plate and turn the flow
adjustment knob to "5". Run the remaining mix
through the freezing cylinder and properly dispose of
the mix.

Note: If local health codes permit the use of
rerun, place a sanitized, NSF approved rerun
container beneath the opening of the front plate and
run the remaining mix into the container. See
page 36 for instructions regarding the proper use of
rerun.
Step 6
After all the custard has drained from the hopper,
remove the hopper cover, the flow control rod and
the feed tube.

Repeat these steps for the remaining freezing
cylinders.

Place the hopper refrigeration switch in the OFF
position.

Make sure the refrigeration switch is in the OFF
position.
