Pressure regulator valve (3) (Dual Xpress
model). This keeps the pressure stable
inside the cooker at the selected pressure
level. Turning the pressure regulator (15)
anticlockwise (Fig. 7) allows you to gradually
increase the working pressure: traditional
cooking (30 kPa), fast cooking (60 kPa) and
super-fast cooking (90 kPa).
As pressure is generated inside the cooker,
the pressure indicator (16) will display one,
two or three black rings corresponding
to the pressure level selected with the
regulator (15). When the pressure cooker
reaches the selected pressure level, you
will need to reduce the heat source to
a medium-low power to allow it to keep
the pressure stable, always showing the
appropriate ring. If the heat intensity is
kept at the maximum, the pressure will
continue to rise and a fourth ring will appear
in red. The pressure regulator valve (3) will
alert you by releasing the excess pressure
through the steam release system (17).
Do not be alarmed if this happens. Simply
reduce the heat source intensity.
When the cooking time is complete, select the
pressure release position
regulator (15) fully in the clockwise direction.
We recommend releasing the pressure from
the cooker slowly and progressively.

Working valve (3) (Level model). This
keeps the pressure level stable at 90 kPa. As
pressure is generated inside the pot, a first
ring will begin to appear and then a second
ring (Fig. 8). The pressure cooker will then
have reached the proper cooking pressure.
You will then need to reduce the heat source
to a medium-low power to allow it to keep
the pressure stable, always showing the
second ring. If the heat intensity is kept at
the maximum, the pressure will continue
to rise and the working valve (3) will warn
you by releasing copious steam. Do not be
alarmed if this happens. Simply reduce the
heat source intensity.
Automatic open/close button (4). To close
the pot, position the lid (1) as indicated in the
