proper working pressure level is maintained.
Depending on your pressure cooker model,
steam will be expelled through the device
responsible for regulating pressure in case
of over-pressure:
- Duo and Rapid Xpress models: steam
will be expelled through the pressure
regulator valve (3).
- Dual Xpress model: steam will be expelled
through the steam release system (17)
and a red ring will show in the pressure
indicator (16).
- Level model: steam will be expelled
through the working valve (3).
Depending on the pressure cooker model
you have purchased, you may see when
it has the right working pressure in a
different manner:
- Duo and Rapid Xpress models: steam
flow will be moderate and constant.
- Dual Xpress model: the pressure gauge
(16) will show the ring you selected with
the pressure regulator (15).
- Level model: the working valve (3) will
show the second ring.

Pay
attention
indicators to check whether the
working pressure is low:
- Duo and Rapid Xpress models: steam
flow is no longer constant.
- Dual
Xpress
model:
indicator ring (16) for the selected
pressure level is hidden.
- Level model: the second ring of the
working valve (3) is hidden.
When you see that the pressure is lower
than it should be, increase the heat source
to
the
following
the
pressure
intensity until the normal working pressure
is reached.

Never shake the pressure cooker while it
is cooking. This will cause the working/
pressure regulator valve (3) to release
steam and the pressure will then decrease.

When
cooking
preparations (purées, creams, pulses),
take care when opening the pressure
cooker. Follow the steps in the "Opening the
cooker" section when you open the lid (1)
to prevent possible bubbles of steam from
splashing, which can cause burns. Never
attempt to open the cooker by forcing it
when it is still pressurised.
CAUTION: never force cooker opening
or closing.
How to release the pressure
after cooking
Depending on the main ingredient of
the dish being prepared, you will need to
determine whether the pressure cooker
needs to cool naturally or you need to use
a fast cooling method. You can choose
between one of these methods to release
the pressure:
1. Releasing the pressure naturally
To use this method, move the pot off the
heat source and let it stand while the
pressure drops naturally.
(Dual Xpress model) During this process,
the pressure indicator (16) will start to
lower and the black rings will disappear
progressively. Once the pressure sensor
(2) has dropped, you can safely open the
pressure cooker.
