Corn Bread

serves 2–4
½ cup yellow cornmeal
½ cup all-purpose flour
2 tablespoons sugar
1½ teaspoons baking powder
½ teaspoon kosher salt
½ cup whole milk
¼ cup vegetable oil
½ cup fresh or frozen corn kernels
½ cup fresh jalapeño (optional), sliced thin and seeds
1. Whisk all dry ingredients together in a mixing bowl. Lightly beat wet
ingredients together, then pour over the dry mix and whisk until smooth.
2. Lightly coat pizza pan with nonstick spray; pour in corn bread mixture.
3. Place the dish into the basket, then put the basket and heating chamber
into the Air Fryer.
4. Set temperature to 350° F and set time for 20 minutes. Press On/Off.
5. When cycle is complete, check for doneness with a toothpick. When
inserted off center it should come out clean. If not done, set temperature to
350° F for an addtional 5 minutes.
6. When cooking is complete, invert onto a plate, then invert onto another
plate to have rounded top facing up.
