Rubs and Marinade Recipes
Mediterranean Rub
2 tbsp. fennel seeds, crushed
1 tbsp. freeze-dried chives
1 tbsp. mustard seeds, crushed
1 tsp. lemon pepper
1/4 tsp. garlic powder
1/4 tsp. salt
Mix the ingredients in a bowl and store covered in a cool,
dark place or freeze. Yields 1/4 cup.
Universal Smoking Rub
Good on smoked ribs, brisket, and chicken.
3/4 cup paprika
1/4 cup freshly ground black pepper
1/4 cup coarse salt, either kosher or sea salt
1/4 cup sugar
2 tbsp. chili powder
2 tbsp. garlic powder
2 tbsp. onion powder
2 tsp. cayenne
Mix the spices in a bowl and store covered in a cool, dark
place or freeze. Yields 2 cups.
