C. PREPARING "KEBBE"
"Kebbe" recipe
Wrap for "Kebbe"
450g
lean mutton, veal or beef *
150-200g
fl our *
1 teaspoon
allspice
1 teaspoon
nutmeg
1 pinch
chili powder
1 pinch
pepper
* Using more meat and less fl our for the wrap improves the consistency and taste of the wrap.
Mince the meat three successive times in the meat grinder (fi rst using the coarse, then the
medium and fi nally the fi ne perforated disk) and mix with the other ingredients. Then mince the
whole once again.
Remove perforated disk and blade cross from meat grinder.
Place "Kebbe" accessory upon drive spindle and fi t in openings. Screw on sealing ring.
Form "Kebbe" wraps and freeze slightly. Then fi ll these wraps with the following ingredients and
fry in olive oil.
Meat fi lling
100g
mutton
1 ½ soupspoon
olive oil
1 ½ soupspoon
fi ne chopped onion
1/3 teaspoon
allspice
½ teaspoon
salt
1 ½ soupspoon
fl our
Fry mutton till brown and mix all other ingredients with the minced mutton. Fill "Kebbe" wraps
with this paste and fry.
Vegetable or rice fi lling
250g stewed broccoli – or 250g stewed zucchini – or
250g boiled rice.
Fill "Kebbe" wraps and fry.
D. SAUSAGE FILLING FUNNEL
1. Place the coarse perforated disk and the blade cross in their respective positions – rounded
side facing perforated disk, fl at side facing worm.
2. Lead narrow end of sausage fi lling funnel through sealing ring and screw on sealing ring.
3. Steep sausage skin in lukewarm water for 30 minutes to make it smooth.
4. Then slip sausage skin over sausage funnel for fi lling.
5. Put sausage paste in fi lling tray. Switch on machine. Push sausage paste with pusher. Never
insert your fi ngers in fi lling neck! Sausage skin is evenly fi lled automatically.
E. SHORTBREAD BISCUITS
1. Take the piping attachment and put this on the appliance. Choose your shape. Do not use
the perforated disk and blade cross.
2. Now give the dough on the fi lling bowl and switch on the appliance.
3. Take the pusher to cram the dough in the hole. Do not use your fi ngers!
4. The formed dough comes out of the piping attachment. You can give it special shapes now.

CLEANING
1. Switch off meat grinder and unplug. Make sure motor has stopped.
2. Remove blade casing from the motor block by loosening the locking screw.
3. Unscrew sealing ring.
4. Remove perforated disk. To do so apply a screwdriver with slight pressure, if necessary,
between disk and meat grinder casing.
5. Remove blade cross. Extract worm.
6. Remove meat rests, etc.
7. Wash all parts in hot soap water and then dry. Do not use any aggressive detergents. The
parts are not dishwasher-proof.
8. Wipe motor unit with wet cloth only. Do not rinse under running water, do not immerse in
water! Do not apply spirit, petroleum ether or similar substances!
9. To avoid corrosion grease perforated disk and blade cross with some salad oil.
