Problem
15. Product is not fully cooked at the end
of the Cook cycle when using fresh 
product.
16. The display reads "PROBE OPEN"
(Zone ID).
17. The display reads "UPPER PLATEN
STUCK. CALL SERVICE - LATCH. IF
THE PLATEN IS OPEN, COOK FLAT
ITEMS ONLY."
18. The display reads "PLATEN NOT
LATCHED. CALL SERVICE - LATCH.
IS AN OBJECT STUCK UNDER THE
PLATEN? IF NO COOK FLAT ITEMS
ONLY."
Troubleshooting
Probable Cause
i. Other equipment may be at fault.
j. There is grease or carbon buildup on
the bottom of the upper platen handle.
k. The upper platen or lower grill surface
is not clean and/or has carbon buildup.
a. The meat being cooked is below 36°F
(2.2°C).
a. The connections are loose and/or the
thermocouple or motor control board is
faulty.
a. The arm bearings are dirty.
b. The air cylinder is faulty.
c. Plugged air lines to the cylinder.
a. The pneumatic system is faulty.
b. The latch switch is faulty.
c. The latch solenoid is faulty.
Model 810, 812, 820, 822, 828 Series
TROUBLESHOOTING
Remedy
i. Check the temperatures of all
meat storage freezers to make
sure they are set to 0°F (-18°C).
Check the temperatures of all
meat storage refrigerators to make
sure they are set to 38°F to 42°F
(3°C to 5°C).
j. Follow closing procedures to 
properly clean and remove carbon
buildup from the bottom of the
platen handles.
k. Closing procedures must be 
followed to properly clean the
upper platen and the lower cook
surface and to remove the carbon
buildup.
a. Inspect the meat temperature. If
the meat is below freezing 32°F
(0°C), the freezer set point must
be adjusted.
Note:
When cooking fresh
product, increasing the cut-in,
cut-out pressures of the
compressor pressure switch will
not "smash" the product more.
The smashing of product is only
dependent on the weight of the
platen itself.
a. Validate the connections; replace
faulty thermocouple or motor 
control board.
a. Replace the arm bearings.
b. Replace the air cylinder.
c. Replace the air lines.
a. Find the leak and repair.
b. Replace the latch switch.
c. Replace the latch solenoid.
