INSTALLATION
y Setting up the trolley :
The trolley should preferably be set up on a flat and horizontal surface. The openings for the air flow inlets and outlets
required for the trolley to operate are located beneath it. Do not obstruct the air flow around the wheels and bumper strips.
Do not obstruct the upper vent pipe on the GN2/1 model (see Diagram 1 on Page 2).
y Electrical connection :
The trolley must always be switched off using the central On/Off switch on the Human-Machine Interface before connec-
ting and disconnecting it.
The trolley is equipped with a Hypra type male power connector located on the side of the trolley, for a 230V single phase
supply for the GN1/1 model and a three phase 400V supply for the GN2/1 model.
A matching female electric power connector is supplied with the product. This connector must be wired by a suitably
qualified person. The wiring should use a single phase 16A line with earth for the GN1/1 model and a three phase 32A
3P+N+Earth line for the GN2/1 model. The trolley should be connected to a line that is protected by a high sensitivity
residual-current device and protected against overvoltages. The electric power connection is only required to operate the
upper enclosure for reheating and maintaining the temperature of food. Cooling in the lower part of the trolley is ensured
using rechargeable eutectic plates.
OPERATION
y This appliance is used as part of a process for keeping food cold and for heating and keeping food hot or cold. It cannot be
used to reheat, cook or refrigerate food.
y In line with applicable regulations, food placed in this trolley must be at a temperature of 0°C to +8°C for use in cold storage
applications in line with standard AC D40-008 (the standard that applies to food delivery trolleys).
y Functions are common to all "Carce'Roll" range products.
y This appliance is certified by the EN631-2 standard guaranteeing its compatibility with standard food trays compliant with
standard EN631-1. This product is therefore only designed to use gastronome model 1/1 and ½ size trays, with or without
lids, as well as polypropylene GN1/6 trays placed on stainless steel grilles provided for this purpose. When using polypro-
pylene GN1/6 trays, only the "half load" programme should be used.

y This appliance is designed to work in passive cooling mode using cold thermal accumulators at -2°C, so-called "eutectic"
plates. After every serving, these accumulators must be removed from the trolley. When starting a phase where food is
kept cold, fully charged accumulators must first be installed in the trolley.
y Using this appliance in any way other than that described above, and making any change to its original design will release
the manufacturer from any liability.
