When the Variety Cooker beeps, put demerara sugar, salt, mixed spice, cinnamon and fresh
ginger, mix well, close the lid and cook for 1 hour 30 minutes.

poultry and meat as a side dish or let it cool down and portion into sterilized jars. The chutney
should keep sealed, refrigerated and then serve cold.
