Spicy Beef Roast

2 (2 to 3 pounds each) beef tip or rump roasts
Cracked black peppercorns
4 cloves garlic, minced
3 tablespoons balsamic vinegar

cup soy sauce

2 tablespoons Worcestershire sauce

teaspoons dry mustard

teaspoon salt

1. Make several slits in top of roasts.
2. Combine vinegar, soy sauce, Worcesstershire sauce, and mustard.
Brush marinade over roasts.
3. Combine cracked pepper and garlic. Rub over meat. Sprinkle with
salt.
4. Place roasts on rack. Set rack into Smoker Roaster.
5. Cover with Lid and roast at 350°F for 20 to 25 minutes per pound or
until roast reaches desired doneness.

Baked Beans

2 cans (7 pounds each) pork and beans

cup molasses

cup ketchup

cup prepared barbecue sauce

cup Worcestershire sauce

2 tablespoons dry mustard powder
1 pound of bacon, cooked until just crisp and cut up
1. Combine all ingredients in an oven safe dish and place in roasting
pan on the rack.
2. Cover and cook at 300 °F for 2 hours or until heated through. Stir
occasionally.

Glazed Ham

4 pounds fully cooked ham
3 tablespoons dry mustard

cup apricot preserves

cup light brown sugar, packed

1. Score the surface of the ham with shallow diamond-shaped cuts.
2. Combine the preserves and mustard and spread over the ham. Pat
brown sugar over the apricot mixture.
3. Place the ham on the rack and place the rack into the Smoker
Roaster.
4. cover with lid and roast the ham at 325°F for 1
