Pepper Crusted Braised
Short Ribs
6 to 9 pounds of beef short ribs

teaspoon freshly cracked black pepper

15 cloves garlic, minced

1 cup red wine (optional)
1. Rub ribs on all sides with pepper and garlic. Sprinkle with salt.
2. Sear on stovetop on medium high until brown. Place ribs in roasting
pan. Pour broth over ribs.
3. Cover with lid; reduce heat to 300 °F and cook until tender

Pork Roast

4 to 5 pounds pork loin roast
4 cloves garlic, minced
1 teaspoon salt

teaspoon pepper

cup Italian dressing

cup Worcestershire sauce

1. Place roast on rack. Press minced garlic into surface of the roast.
2. Place rack into Smoker Roaster.
3. Combine dressing and Worcestershire sauce. Brush roast with
marinade.
4. Cover with lid and cook at 350°F for 2 to 2

Spaghetti Sauce

1 can (48 ounces each) tomato juice
4 cans (28 ounces each) diced tomatoes
2 cans (12 ounces each) tomato paste
2 tablespoons Worcestershire sauce
6 cups water 5 cloves garlic, minced

1. Add all ingredients to an oven safe dish and stir well to combine.
2. Set rack into roasting pan. Place oven safe dish onto rack.
3. Cover Smoker Roaster with lid and cook at 350°F for 3 to
4 hours until thick; add meatballs during last 1 to 1
Stir occasionally.
