Cheesecake
Crust:
Mix the graham cracker crust and sugar
together.
Combine graham-sugar mixture with melted
butter slowly, just until the crumb stays
together when pressed.
Press this mixture onto the bottom of a
parchment paper lined pan and bake using
dry heat at 325°F for 5-8 minutes or until
toasted.
Cheesecake:
Slowly mix together cream cheese and sugar, scrape bottom and sides
of the bowl often.
When this mixture is well-blended; add sour cream and continue to
mix slowly.
Next, add eggs one at a time and scrape the bowl regularly to combine
thoroughly.
Add vanilla and lemon juice and mix until well-blended. Take your
time, let it mix well, slowly, no air.
Press crumb layer into a Roasting and baking pan, top with cheesecake
batter and bake.
