FILTERQUICK™ FQG80T/100T/120T GAS FRYER
NOTE: The Frymaster FQG80T/100T/120T fryer requires a start-up, demonstration and
training before normal restaurant operations can begin.

General
Read the instructions in this manual thoroughly before attempting to operate this equipment. This
manual covers all configurations of models and FQG80T/100T/120T fryers. Models designated with
FQG80T/100T/120T are equipped with built-in filtration systems. The fryers in this model family
have most parts in common, and when discussed as a group, will be referred to as
FQG80T/100T/120T fryers.
FQG80T/100T/120T with FilterQuick™ Series gas fryers are energy efficient, tube-style, gas fired fry-
ers.
FQG80T/100T/120T with FilterQuick™ Series Gas Fryers can be configured for natural gas or pro-
pane (LP gas, as required by the customer.
Each frypot is equipped with a temperature probe for precise temperature control.
All FQG80T/100T/120T with FilterQuick™ Series Gas Fryers come standard with electronic ignition
and melt cycle mode. The FQG80T/100T/120T with FilterQuick™ Series Gas Fryers are controlled
with a FilterQuick™ easyTouch FQ4000 FQ80T/100T/120T controller.
All fryers in this series require an external source of AC electrical power. Units can be configured
for voltages ranging from 100 VAC to 240 VAC.
FQG80T/100T/120T with FilterQuick™ Series Gas Fryers are shipped completely assembled. All fry-
ers are shipped with a package of standard accessories. Each fryer is adjusted, tested, and
inspected at the factory before crating for shipment.

Principles of Operation
The incoming gas flows through orifices and is mixed with air in the burners to create the correct
ratio for proper combustion. The mixture is ignited at the front end of each heat tube by the pilot
light. Internal diffusers slow the flame as it goes through the burner tube. This slow, turbulent
flame increases heat transfer to the walls of the tubes to heat the oil more efficiently.
This appliance is only for professional use and shall be used by qualified personnel only, as
defined in Section 1.6.
