3.1
Equipment Setup and Shutdown Procedures
The on-site supervisor is responsible for ensuring that operators are made aware of the
inherent hazards of operating a hot oil filtering system, particularly the aspects of oil
filtration, draining and cleaning procedures.
Before lighting the fryer, make sure the fryer is OFF and the frypot drain valves are
closed. Remove the basket support rack(s), if installed, and fill the frypot to the bottom
OIL-LEVEL line. If solid shortening is being used, make sure it is packed down into the
bottom of the frypot. The oil capacity of the FQG80T fryer is 80 lbs. (10.56 gallons/40
liters) at 70°F (21°C). The oil capacity of the FQG100T fryer is 100 lbs. (12.21 gallons/50
liters) at 70°F (21°C). The oil capacity of the FQG120T fryer is 120 lbs. (15.80 gallons/59.81
liters) at 70°F (21°C).
Do not melt solid shortening in the fryer unless shortening is packed firmly below, be-
tween, and above heat tubes; or operate fryer if shortening/oil is not up to the lower oil
mark in vessel. Failure to do this may damage vessel and void warranty.
3.1.1 Setup
Never operate this appliance with an empty frypot. The frypot must be filled with water
or oil before lighting the burners. Failure to do so will damage the frypot and may cause
a fire.
Remove all drops of water from the frypot before filling with oil. Failure to do so will
cause spattering of hot liquid when the oil is heated to cooking temperature.
Prior to filling frypots with oil, ensure the fryer is plugged in and all drains are closed.
1. Ensure that the power cord(s) is/are plugged into the appropriate receptacle(s). Verify that the
face of the plug is flush with the outlet plate, with no portion of the prongs visible.
2. Fill the frypot with shortening to the bottom OIL LEVEL
line located on the rear of the frypot. This will allow for
shortening expansion as heat is applied. Do not fill cold
shortening any higher than the bottom OIL LEVEL; over-
flow may occur as heat expands the oil. When using sol-
id shortening, cut it into small pieces and pack it below
the heat tubes, between the tubes and on top of the
tubes, leaving no air spaces around the tubes. Do not
disturb or bend the probe sensing bulbs.
