In the event of prolonged power failure, the ignition module will shut down and lock out
the system. Turn the controller to "OFF" and then back "ON" after power has been re-
established.
5. If the pilot flame fails, the ignition module will shut down and lock out the system. To restart,
turn the controller "OFF", wait approximately 5 minutes for the system to recycle itself, then re-
peat step 3.
If the pilot and main burner go out, the fryer(s) MUST be left completely shut down at
least 5 minutes before lighting.
When checking for burner ignition or performance, do not get too close to the burners.
Slow ignition can cause possible flashback, increasing the potential for facial and body
burns.
6. The fryer will automatically enter the melt cycle mode if the frypot temperature is below 180ºF
(82ºC) and will display MELT CYCLE IN PROGRESS. (NOTE: During the melt cycle, the burners
will repeatedly fire for a few seconds, then go out for a longer period.) The solid shortening
must be stirred occasionally during the heating process to ensure all the shortening in the drain
and vat are liquified. When the frypot temperature reaches 180ºF (82ºC), the unit will automati-
cally switch to the heating mode and PREHEAT is displayed until within 15°F (9°C) of setpoint.
The burners will remain lit until the frypot temperature reaches the programmed cooking tem-
perature. Once the fryer reaches setpoint, the controller display changes to START and the fry-
er is ready for use. If solid shortening is used, the MELT cycle MUST be used to melt the short-
ening. DO NOT DISABLE OR CANCEL THE MELT CYCLE IF USING SOLID SHORTENING.
7. Ensure that the shortening level is at the top frypot bend when the oil is at its cooking tempera-
ture.
