Remove the outer leaves of the lemongrass and discard the tough base. Slice the
soft inner core and set aside.

Deseed the chili peppers and set aside.

Process the lemongrass in the mini bowl for 40 seconds. Add the chili peppers and
run for a further 5-10 seconds.

Put the fish in the main bowl with the metal blade, followed by the chili-lemongrass
mixture and all the other ingredients. Season to taste. Pulse 7-10 times to obtain an
even consistency.

Shape the mixture into balls measuring 3 cm across. Flatten with your hand.
6.
Heat the oil in a frying pan and cook the cakes for about 2 minutes on each side.

To grate with the MAGIMIX C 3200:

1. Use the midi bowl: Place it inside the main bowl.
2. Choose the correct grater disc (e.g., R/G4 for 4mm grating).
3. Slide the disc support onto the motor shaft.
4. Position the disc with the function code facing up.
5. Slot the disc onto the support and turn it anticlockwise until it locks into place.
6. Use the feed tube: For small or long items, use the small feed tube and stack items horizontally.
7. Always use the pusher to feed items into the tube.
8. After grating, small stubs of ingredients may remain on the disc—this is normal.

Warning: The discs are very sharp. Handle with care and never insert fingers or foreign objects into the feed tube.
