Hold Cycle During Operation

The HOLD cycle is only used for custard, NOT
lemon ice.
Step 1
Place the flow adjustment knob in the "CLOSE"
position. Set the timer for one minute.

Step 2
After one minute has expired, place the refrigeration
switch in the "HOLD" position for custard.
Note: The HOLD cycle is not used for lemon ice.

Step 3
When the frozen custard stops flowing,
(takes approximately two minutes) place the beater
motor switch in the "OFF" position.
Step 4
Use the rake to remove as much custard from the
product door as possible.
