Step 5
When custard appears, adjust the flow adjustment
knob to gain the desired custard texture. Turn the flow
adjustment knob clockwise if the product is too firm
and counter-clockwise if the product is too soft.

When the product looks servable, close the draw
arm plate. Using sanitized hands, install a
sanitized custard chute.

Step 7
Open the draw arm plate. Continue to run the frozen
custard into the holding cabinet until the desired
amount is obtained. Adjust the mix flow as needed
to maintain proper product consistency. When the
desired amount is obtained and more custard will be
made later, follow the "Hold Cycle During
Operation" instructions starting on page 26.

Preparing for Shutdown

Perform the following procedures to remove the
remaining custard in the freezing cylinder when
there is mix in the hopper.
Step 1
Place the refrigeration switch in the "OFF" position.
Step 2
Set the timer for 20 minutes. This allows the freezing
cylinder enough time to warm before removing the
remaining custard.
