Fruit flan with shortcrust pastry

Preparation time: approx. 70 minutes
Makes 8–10 slices
Dough ingredients
200 g plain flour
65 ml water
80 g butter
¹/₄ tsp salt
Topping ingredients
30 g ground hazelnuts
500–600 g fruit (e.g. apricots, plums,
pears, apples, cherries)
Ingredients for the filling
2 medium eggs
200 ml double cream
50 g caster sugar
1 tsp vanilla sugar
Accessories
Round baking tray  27 cm
Method
Dice the butter, add to the flour, salt
and water and knead rapidly until a
shortcrust pastry mixture is formed.
Chill for 30 minutes.
Line a round baking tray with the pastry
and sprinkle with the ground hazelnuts.
Wash the fruit, peel and stone if
necessary. Halve or slice the fruit and
arrange on top of the short crust pastry.
Start the Automatic programme or pre-
heat the oven.
Mix the eggs, cream, caster sugar and
vanilla sugar and pour over the fruit.
Place the flan in the pre-heated oven
and bake until golden.
